When the aroma of saffron, cardamom and rice mingles with the milk, then understand that a special Eid sweet is being prepared. One of these desserts is Phirni, which radiates royal style even in its simplicity. This easy and delicious recipe of Phirni can prove to be very effective for those who want to bring traditional taste at home this Eid.

Phirni, which has been a part of Indian sweet culture since the Mughal period, still scents homes on every festival. This sweet made by grinding Basmati rice is soft, creamy and very tasty unlike kheer. With just some basic ingredients and some patience, you too can prepare it in 6 simple steps.

Unique combination of simplicity and royal taste

The history of Phirni is considered to be related to the Mughal period. Made by coarsely grinding Basmati rice, this sweet has a soft texture unlike ordinary kheer. Starting with milk, rice, sugar and cardamom, it becomes manifold in taste with the addition of saffron and dry fruits.

Ingredients: 1 liter full-fat milk

  • 3 tbsp soaked basmati rice

  • 4 tablespoons sugar (can increase or decrease as per taste)

  • cardamom powder

  • saffron threads

  • chopped pistachios and almonds

  • few drops of rose water

step 1: Preparation of Rice: Soak Basmati rice in water for 30 minutes. Drain and grind coarsely with some water. This paste gives thickness and traditional texture to Phirni.

Step 2: Boiling Milk Boil milk in a heavy bottomed vessel. Keep stirring occasionally so that the milk does not stick to the bottom.

Step 3: Mixing the rice paste: Slowly add the ground rice to the boiling milk. Cook on low flame for 8-10 minutes while stirring continuously until the mixture becomes thick and creamy.

Step 4: Add flavor and aroma: Mix sugar, cardamom powder and saffron threads. After cooking for a few minutes the sugar will dissolve and the aroma of saffron will spread.

Step 5: Add dry fruits and rose water, chopped pistachios and almonds. Finally add one tablespoon rose water and stir gently.

Step 6: After cooling and serving, take out the phirni in small bowls and refrigerate for 1-2 hours. While serving, garnish with dry fruits and saffron. The cold-creamy Phirni is liked so much by the Eid guests that it is often requested for the second time also.
