Material:

  • Ripe tomatoes: 4-5 medium sized

  • Pumpkin: 250 grams

  • Onion: 1 medium size

  • Garlic: 3-4 cloves

  • Ginger: 1 inch piece

  • Green chilli: 1

  • Butter/Oil: 1 tbsp

  • Bay leaf: 1

  • Cinnamon: 1 small piece

  • Black pepper: 4-5 whole

  • Salt: as per taste

  • Sugar: 1 tsp

  • Water/vegetable broth: 3-4 cups

  • Fresh cream/coriander leaves: to garnish

Method:

Roasting Vegetables:

Heat butter or oil in a deep pan. Add bay leaves, cinnamon and black pepper and fry for a few seconds. Now add chopped onion, garlic, ginger and green chilli and fry until golden.Now add chopped tomatoes and pumpkin pieces to it. Mix well and fry for 2-3 minutes until the tomatoes become slightly soft.
