Travelling Japanese bakery Fillo Bakes revives fresh bread culture
In an era dominated by online grocery deliveries, a Bengaluru startup is reviving the nostalgic charm of buying freshly baked bread from neighbourhood bakeries. Fillo Bakes, a travelling Japanese-inspired bakery launched in December 2025, is bringing warm bread directly to communities across the city.
Founded by Neha S Nirmal and Nischal Vasant Meethal, the venture aims to recreate the experience many Indians remember from childhood — the aroma of fresh bread and the excitement of picking up buns or pav from local bakeries.
A moving bakery inspired by nostalgia
The founders, who previously built food brands such as Couch Potato and Elements Bistro in Mysuru, wanted to reintroduce the joy of freshly baked bread reaching customers directly.
Instead of operating through a conventional storefront, Fillo Bakes functions as a travelling bakery that delivers freshly baked bread to neighbourhood clusters through pre-orders placed on its website and WhatsApp.
The concept is similar to daily milk subscriptions, where fresh bread becomes a regular household staple.
Japanese baking meets Indian tastes
The bakery specialises in Japanese-style breads known for their soft, pillowy texture. Signature offerings include shokupan (Japanese milk bread) and soft milk buns made using precise hydration and fermentation techniques.
The menu also features savoury karepans, inspired by Japanese curry bread, with innovative vegetarian fillings such as gochujang-glazed sweet potato and ratatouille vegetables.
Sweet options include cream-filled anpans in flavours such as chocolate and banana biscoff, along with fruit sandos, pies, strudels and speciality toasts.

Perfecting eggless Japanese bread
One of the biggest challenges for the founders was achieving the characteristic Japanese “fuwa fuwa” texture — meaning soft and airy — using a completely eggless recipe.
The team conducted extensive trials and sent sample batches to over 300 customers before launching the bakery to ensure consistency and flavour.
According to the founders, the eggless shokupan became their biggest breakthrough, delivering the delicate texture typical of Japanese bakeries while remaining entirely vegetarian.
Building a community around fresh bread
Currently, the travelling bakery operates across Bengaluru in scheduled neighbourhood slots, preparing dough only after orders are placed to maintain freshness.
The founders are now planning to expand their operations by introducing subscription clusters, seasonal menu innovations and curated bakery offerings for events and weddings.
They also plan to create a permanent experience space in the future while continuing the mobile bakery concept that brings freshly baked bread directly to customers.
