To make corn bread, first sift corn flour and wheat flour in a big vessel. Now add finely chopped coriander, carom seeds, salt and oil to the flour. Mix the dry flour well. Now prepare a soft dough by kneading it with lukewarm water.
After binding the dough, keep kneading for 5 minutes. Now cover the dough and keep it for 10 minutes, so that it sets well. Now apply some ghee on your hands and take the dough as per the dough to make roti. Apply a little dough on the ball and make it a little bigger with your fingers and palms.
You have to roll the roti thickly with light hand. Now pick up the roti, expand it a little with your hands, shake off the excess dry flour and put it on the pan. Meanwhile, prepare the second roti also. Turn the roti lying on the pan after it gets lightly cooked. Let the roti cook until it turns light brown on the other side.
Now put the roti on the gas and rotate it with tongs and cook it well from both the sides. Now apply ghee on the roti, keep it on a plate and serve it with mustard greens. If you want, you can eat corn roti with green peas or any vegetable with gravy. In winter, corn bread keeps both taste and health good.
