  • 3-4 ridge gourd
  • 2 cups sattu
  • Half spoon dry mango powder
  • Half teaspoon garam masala powder
  • 1 teaspoon red chili powder
  • 2 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 cup bread crumbs
  • half teaspoon cumin powder
  • 1 cup oil
  • salt as per taste

method of making

  • To make ridge gourd kebab, first peel the ridge gourd and clean it with water.
  • Now take out the seeds from all the ridge gourds. Then grate all the ridge gourd.
  • After this, press the grated ridge gourd with your hands and squeeze out the water.
  • Now put the ridge gourd in a bowl. Then add sattu, red chilli powder, coriander powder, garam masala, cumin powder and salt and mix.
  • After this, press the ridge gourd with hands and prepare small cakes and keep them in a plate.
  • Now heat oil in a pan on gas. Then put all the prepared kebabs in it and bake it.
  • When the kebabs become golden, take them all out in a plate.

Material

  • 6-7 small ridge gourds
  • 1 cup fennel
  • 1 cup coriander
  • 1 teaspoon red chili powder
  • 2 teaspoon coriander powder
  • half teaspoon turmeric powder
  • 1 teaspoon garam masala
  • salt as per taste
  • 2 finely chopped onions
  • 1 finely chopped tomato
  • 1 teaspoon ginger paste
  • 1 cup oil

method of making

  • To make stuffed ridge gourd, first peel the ridge gourd.
  • Then wash it with clean water. Now with the help of a knife, cut the ridge gourd from the middle and take out the seeds.
  • After removing the seeds, cut the ridge gourd into two pieces. Now cut onion and tomato with the help of a knife.
  • After this, keep a pan hot on the gas. When the pan becomes hot, add fennel and whole coriander and fry.
  • When aroma starts coming from it, turn off the gas. Then cool this mixture.
  • After it cools down, add roasted fennel and whole coriander in a gas mixer and prepare a coarse powder.
  • Now heat a pan on the gas. Then add oil into it. When the oil becomes hot, add the ground mixture of fennel and coriander and fry it.
  • After some time, add finely chopped onion and fry it. When the onions are fried, add finely chopped tomatoes, salt, turmeric powder, red chili powder and fry.
  • When this mixture is roasted, turn off the gas and let the mixture cool down.
  • When the mixture cools down, fill the spices well in the middle of the ridge gourd and wrap the whole ridge gourd with a thread and keep it in a plate.
  • Now heat oil in a pan on gas. Then add ridge gourd to it and fry it.
  • When the ridge gourd becomes golden, take it out in a plate.
  • Stuffed ridge gourd is ready. You serve it with roti, paratha and rice-dal.
