Black carrot – 250 grams
Radish – 100 grams
Mustard powder – 2 tsp

Red chilli powder – 1/2 tsp
Water – 1 liter
Method
Cut black carrots and radish into thin long pieces. After this, fill water in a glass vessel and add chopped carrots and radish in it. Now add mustard powder, salt and red chilli powder and mix it well. Cover this mixture and keep it in the sun for 3-4 days and stir it once every day. When Kanji is ready, cool it and serve.
Beetroot Kanji Recipe

Beetroot – 2 medium sized (chopped)
Mustard powder – 1 tbsp
Salt – as per taste
Black salt – 1/2 tsp
Water – 1 liter
Method
Cut the beetroot into small pieces. Now fill water in a glass vessel and add beetroot in it. After this add mustard powder, salt and black salt and mix well. Now cover the vessel and keep it in the sun for 3-4 days. Filter the prepared kanji and serve it chilled.

Cooked rice – 1 cup
Buttermilk (Matha) – 2 cups

Green chilli – 1 (finely chopped)
Curry leaves – 5-6 leaves
Ginger – 1/2 tsp (grated)
Method
Mash the cooked rice lightly and add buttermilk to it. After this, pour it in a glass or earthen vessel and then add salt, green chilli, curry leaves and ginger. Mix well. Let it sit for 2-3 hours so that a light yeasty aroma emerges. Now cool it and serve.
