Vietnam’s blood pudding cracks global top 50 duck dishes

Vietnam has placed three dishes in TasteAtlas’s top 50 duck dishes, including the unusual blood pudding, along with bamboo shoot noodle soup and porridge.

The dish is made by letting duck blood set, then mixing it with meat, offal, herbs, and spices. It is finished with peanuts, lime, and served with herbs, rice crackers, or a cup of rice wine.

This contrasts with TasteAtlas’s earlier rankings. Just months earlier, the magazine had placed blood pudding among the world’s worst dishes. In another 2024 list, it was named the second-worst Vietnamese dish, behind only green bean cake.

The controversy lies in eating it raw, which raises hygiene concerns among diners.

Vietnam also secured two other spots on the list. At number 18, duck noodle soup with bamboo shoots offers a slow-simmered duck bone broth and meat dipped in ginger fish sauce.

At number 35, duck porridge offers a dish of seasoned rice porridge with duck, sometimes served with cubes of congealed blood.

Topping the global ranking is China’s Peking duck, served with meat and skin wrapped in pancakes or steamed buns. It was followed by two French classics: magret de canard, a seared duck breast, and duck confit, cooked in its own fat.

The “50 Best Duck Dishes in the World” list was updated on Nov. 15, based on more than 2,200 total votes, of which about 1,600 were recognized as valid.
