Ingredients required to make Veg Sevai:

– Vermicelli (Vermicelli): 1 cup
– Oil: 1-2 tbsp
– Cumin: 1/2 tsp
– Onion: 1 (finely chopped)
– Green chilli: 1-2 (finely chopped)
– Ginger: 1/2 tsp (grated)
– Carrot: 1/4 cup (grated)
– Capsicum: 1/4 cup (chopped)
– Peas: 1/4 cup (boiled)
– Salt: as per taste
– Turmeric powder: 1/4 tsp
– Coriander powder: 1/2 tsp
– Red chilli powder: 1/2 tsp
– Water: 1.5 cups
– Coriander leaves: 2 tbsp (for garnishing)

How to make Veg Sevai

1. Fry Vermicelli:
1. Heat 1 tablespoon oil in a pan.
2. Add vermicelli and fry on low flame until it turns golden brown.
3. When the vermicelli turns light brown, take it out in a plate and keep it aside.

2. Prepare tadka:
1. Add some oil to the pan again.
2. Add cumin seeds and let it splutter.
3. Now add finely chopped onion, green chilli, and grated ginger and fry until the onion turns light golden.

3. Add vegetables:
1. Now add carrots, capsicum and peas and fry for 2-3 minutes.
2. Then add turmeric powder, coriander powder and red chilli powder and mix the vegetables well.

4. Add vermicelli and water:
1. Now add roasted vermicelli to it and mix well with the vegetables.
2. Add water and salt and let the mixture boil.
3. When the water starts boiling, slow down the flame and cover the pan and let it cook for 5-7 minutes.

5. Garnish and Serve:
1. When the water is completely absorbed, mix the vermicelli well.
2. Garnish with coriander leaves.
3. Serve hot veg vermicelli.

Serving Method:
– Serve veg vermicelli with raita or pickle.
