Dhokla is made from gram flour, so it is rich in protein. The dhokla is soft, spongy and fluffy due to the right amount of fermentation or the use of ino/ino fruit salt. Materials:
- Gram flour – 1 cup
- Semolina – 2 tbsp (optional)
- Curd – ½ cup
- Water – as required
- Salt – as per taste
- Sugar – 1 tsp
- Turmeric – pinch
- Lemon juice – 1 tbsp
- Eno/Eno Fruit Salt – 1 tsp
- Coriander – finely chopped
- Grated Coconut – Optional
For the crackling:
- Oil – 2 tbsp
- Mustard – 1 tsp
- Green Chillies – 2 (chopped)
- Curry leaves – 8–10 leaves
- Sesame seeds – 1 tsp
- Water – ½ cup
- Sugar – 1 tsp

- First of all mix gram flour, semolina, curd, salt, sugar and turmeric in a bowl so that there are no lumps. Make a medium thick dough by adding water as needed.
- Keep this mixture covered for 10–15 minutes.
- Boil water in a steamer or cooker and grease the dhokla mold with oil.
- Add lemon juice and lastly ino to the flour and mix gently.
- Immediately pour this mixture into the mold and steam it for 12–15 minutes.
- Insert a toothpick and try; If it comes out clean, the dhokla is ready.
- After cooling, cut into squares.
- Now heat oil in a pan and add mustard seeds, sesame seeds, green chillies and curry leaves.
- Add water and sugar to it, bring it to a boil and pour this mixture over the dhokali.
- Serve hot dhokla garnished with green chutney, tamarind chutney and coriander-coconut on top.
