Ingredients needed to make Gobi Masala
– Cauliflower: 1 medium size (cut into small pieces)
– Tomato: 2 (finely chopped or pureed)
– Onion: 2 (finely chopped)
– Ginger-garlic paste: 1 teaspoon
– Green chilli: 2 (chopped)
– Turmeric powder: 1/2 teaspoon
– Red chilli powder: 1 teaspoon
– Coriander powder: 1 teaspoon
– Garam masala: 1/2 teaspoon
– Cumin: 1/2 teaspoon
– Kasuri Methi: 1/2 teaspoon (ground)
– Salt: as per taste
– Oil: 3-4 tbsp
– Water: 1/4 cup
– Coriander leaves: 2 tbsp (chopped)
– Lemon juice: 1 teaspoon
How to make Gobi Masala
To make Gobi Masala, first boil the pieces of cabbage in light salt and water for 5 minutes or put them in hot water. Take it out of water and dry it. Heat 2 tbsp oil in a pan. Fry the cabbage pieces until light golden and crisp and keep aside. Heat oil in a pan and add cumin seeds to it.

When cumin starts crackling, add chopped onion and green chilli and fry until golden. Add ginger-garlic paste and fry until fragrant. Add chopped tomatoes and cook until soft. Now add turmeric, red chilli powder, coriander powder and salt and fry the spices well. Add fried cauliflower to the roasted spices and mix well.
Add 1/4 cup water and cover the pan and cook on medium flame for 8-10 minutes. When the cabbage becomes soft and the spices mix well, add garam masala and kasoori methi. Add coriander leaves and lemon juice. Serve Gobi Masala with hot roti, paratha or rice.
