Potato Tikki tastes delicious only when it is crispy from outside and soft from inside. You can make chaat, burgers or try any new dish from potato tikkis. But it will taste delicious only when it is cooked perfectly. Some small tricks are very useful in making Halwai or street-style tikkis at home. Let us know in an easy way.

boil potatoes the right way

Do not let the potatoes melt too much. After boiling, let them cool completely. Tikkis are better made from cold potatoes and are not sticky.

keep humidity low

If the boiled potatoes are too wet then the tikkis will not become crispy. Add 2–3 spoons of cornflour or rice flour in it. This will make the tikkis crisp from outside.

Mix these things in potatoes: salt, red chilli powder, coriander powder, some roasted cumin, finely chopped green chillies, some green coriander. Then your tikki will become tasty and crispy too.

give tikki some rest

Make tikkis and keep them in the fridge for 10-15 minutes. This makes the tikkis set and do not break while frying.

bake the right way

Add some more oil or ghee on the pan. Roast the tikki slowly on medium flame. Do not turn again and again, only then a good crispy layer will be formed.

Cook the tikki by pressing it on the pan. Sprinkle some semolina or breadcrumbs on top – the crispiness will increase further. If you want, you can also add stuffing of peas or lentils inside, this further enhances the taste.
