Method
– First of all, ragi flour is dissolved well in cold water so that there are no lumps in it. Then this solution is mixed in boiling water and cooked while stirring continuously. After some time it becomes thick.
– When the mixture cools down, small balls are made from it. These balls are put in water and kept overnight so that light fermentation can take place in them. In the morning, they are mixed well with water and sour curd is added.
– After this, ginger, onion, green chilli, curry leaves and coriander are added to enhance the taste. Finally salt is added and it is drunk chilled.
– If it is prepared in an earthen pot, its taste increases even more. The earthen pot helps in maintaining coolness and fermentation also happens well. This gives a mild desi flavor to Ragi Ambli, which makes it more special.
