Material
Cucumber – 2 big sizes
Garlic- 3-4 cloves
Soy sauce- 1 tablespoon
Salt- 1 tsp
Vinegar- 1 tbsp
Chili oil or crushed red chilli – 1-2 teaspoons
Sugar or honey- 1 tsp
Sesame oil- 1 tsp
White sesame – 1 tsp
Green onion – finely chopped
Method of preparation
First, peel two cucumbers. Then, place chopsticks or a wooden spoon on either side of the cucumber to give it a spring-like bite. Now make diagonal cuts on the cucumber, due to which the cucumber will not be cut completely. Then turn the cucumber and make a straight cut from the other side. This will make the cucumber flexible and springy. Now sprinkle some salt on the chopped cucumber and leave it for 5 to 10 minutes so that the excess water drains out.
After this, wash the cucumber with cold water and dry it. In a small bowl, mix grated garlic, vinegar, soy sauce, some sugar or honey and chili oil. If chili oil is not available, you can use red chili powder and hot oil. Now pour this mixture on the cucumber and sprinkle white sesame seeds and finely chopped green onion on top. Keep it in the refrigerator for 10 minutes and then serve.
