Nowadays people are making a lot of changes in their lifestyle and eating habits to stay healthy. This is the reason why these days the trend of making millets i.e. coarse grains a part of the diet has increased rapidly. Jowar is also considered to be one such superfood, which is rich in nutrients. If you want to eat something light, healthy and very tasty for breakfast, then ‘Jowar Dosa’ is a great option. The special thing is that to make this, you do not need to soak pulses and rice for hours or ferment the batter. It is ready in just a few minutes and its crispy texture is just as delicious as Rava Dosa.
Ingredients required to make Jowar Dosa
You can easily prepare this nutritious dosa with some basic kitchen ingredients:

sorghum flour: 1 cup

Rice Flour: 2 tbsp (to make crispy)

Semolina (Rava): 2 tbsp

Green chilly: 1 finely chopped

Cumin: 1 tbsp

Green Coriander: finely chopped

Salt: as per taste

Water: 3 to 4 cups

Oil or Ghee: to bake
Step-by-Step Recipe of Jowar Dosa
Step 1: Prepare the dry mix
First of all, take a big mixing bowl. Add 1 cup jowar flour, 2 tbsp semolina and 2 tbsp rice flour. Semolina and rice flour work to give excellent crispness to the dosa.
Step 2: Add spices and herbs
Now add salt as per taste and 1 teaspoon cumin to this dry mixture. After this add finely chopped green chillies and green coriander. If you want to further enhance its taste, you can also add a little grated ginger to it.
Step 3: Make Thin Batter
Now start adding water slowly into the mixture and keep mixing with the help of a whisk or hand. Keep in mind that there should not be any lumps in the batter. Its batter should be very thin and buttermilk-like, just like Rava Dosa.
Step 4: Let the batter rest a bit
After beating the batter well, cover it and leave it for 10 to 15 minutes. During this time the semolina will absorb water. If after 15 minutes you find the batter a little thick, then add some more water and dilute it again.
Step 5: Heat the pan
Now place a non-stick or well seasoned iron pan on the gas to heat. Keep in mind that the pan should be medium hot. As soon as the batter is poured on a pan that is too hot, it will burn and the dosa will not become crispy.
Step 6: Correct way to pour the batter on the pan
Since this batter is very thin, it is not spread with a spoon on the pan like normal dosa. Take the batter in a bowl or a big spoon and pour it starting from the outer edges of the pan and sprinkle it in a circular motion towards the middle. The lattice shape formed on the pan will make it crispy.
Step 7: Cook on low flame
After adding the dosa, keep the flame medium and apply some oil or ghee on its edges and in the middle. Let it cook until its edges leave the pan on their own and it starts appearing golden-brown from below. After this, turn it gently and cook it from the other side also.
serve hot
Your hot and super crispy jowar dosa is ready. Remove it from the pan and serve it with your favorite coconut chutney, spicy tomato chutney or hot sambar.
Chef Tips to Make Perfect Dosa
Stir the batter: Jowar flour settles at the bottom, so before adding each new dosa on the pan, stir the batter well from the bottom.
Take care of the flame: Always cook the dosa on medium flame, cooking it on high flame in a hurry will make it soft and chewy.
Oil quantity: Do not put too much oil on the pan at once, as this may cause the dosa to become soft instead of crispy.
