Recipe to make Malpua without sugar, syrup and jaggery
First step- For this you have to take 1 cup of wheat flour. Add 1 tablespoon semolina to the flour and mix. Grind some edible fennel and green cardamom and add it to the flour. Fennel and cardamom are options. You can also just add cardamom for flavour. Now take 2 tablespoons of fresh curd and mix it in the flour. Keep in mind that curd should not be sour. Now add water and prepare a smooth batter like pua.

Second Step- Keep in mind here that the solution should neither be too thin nor too thick. If the batter becomes thin then the puas will start spreading and the batter will scatter all over the oil. If the batter is too thick then the puas will become very thick. Now make small and thin balls in desi ghee and take them out. You have to bake the pua till it becomes crispy. Bake all the puas like this and take them out.

Third step- Now take borra in a plate. Bura is easily available in the market. When the roasted puas are slightly hot, pour them over the boora. You can also spread the pua on a plate and put boora on top. Turn the pua over and sprinkle it again. You can wrap the ‘Bura’ on the pua with your hands or with the help of a spoon. Similarly, wrap all the puas in the sack.

Fourth Step- Keep in mind that you have to eat this pua only while it is hot. Due to this, the taste of pua will become slightly crispy and it will be very tasty to eat. If you eat these Bura Malpua, you will become crazy about its taste. If you want to prepare something sweet when a guest comes to your house, then you can make puas made from sugar candy and eat them. Hot puas are very tasty to eat during the rainy season.
