Bottle Gourd Peels Chutney Recipe: After making bottle gourd vegetable or kofta, people often throw away its peels considering them useless, but do you know that very tasty and nutritious chutney can be made from bottle gourd peels? This chutney not only enhances the taste of food but also helps in cooling the body in summers. If you want to try something new and healthy with food, then definitely make this spicy chutney of bottle gourd peels.

Ingredients for making chutney: Fresh peel of 1 gourd, 2-3 green chillies, 4-5 garlic cloves, 1 piece ginger, 2 tbsp roasted peanuts, green coriander, 1 tsp cumin, oil, juice of half lemon, salt as per taste.

Method to make chutney: First of all, wash the bottle gourd peels thoroughly so that the dirt on them is completely cleaned. Now heat oil in a pan and add cumin seeds in it. After this, add garlic, ginger and green chilli and fry lightly. Now add bottle gourd peels to it and cook on medium flame for 4-5 minutes. When the peels become soft, turn off the gas and let the mixture cool. After it cools down, put it in the mixer. Also add roasted peanuts, green coriander, salt and lemon juice and grind it finely. Your delicious and healthy bottle gourd peel chutney is ready.

If you want to enhance the flavor of the chutney, heat some oil in a small pan. Add mustard seeds, cumin seeds and a pinch of asafoetida. Pour this tempering over the prepared chutney. Bottle gourd peels are rich in fiber, which helps in improving digestion. It is considered helpful in cooling the body in summer.

This is a low calorie chutney, hence it is also good for those who want to control their weight. Consuming it with food increases the taste of food manifold. This is also a great way to reduce food wastage. Always use fresh and soft bottle gourd peels to make chutney. If excessive pesticides have been used on bottle gourd, then use the peels only after washing them thoroughly. You can serve this delicious chutney with roti, paratha, dal-rice, idli, dosa or snacks.
