Stuffed Brinjal Recipe

Ingredients for Stuffed Brinjal:
Brinjal 6, water as per requirement, salt
Stuffing masala: Dry coconut 25 grams, ginger 1 inch, garlic, white sesame 1 teaspoon, peanuts 55 grams, green coriander a handful, Kanda garlic masala 2 tablespoon, tamarind pulp 2 teaspoon, jaggery a pinch, turmeric powder, salt as per taste.
Gravy: Oil 3 tsp, cumin seeds half tsp, mustard seeds half tsp, asafoetida half tsp, curry leaves 10-12, onion 1 big size, hot water as per requirement.
Stuffed Brinjal Recipe
To make stuffed brinjal, cut the stalk a little and then make cross cuts in it. Now mix water and salt in a bowl and add brinjal. Now, add grated dry coconut, ginger, garlic and white sesame seeds in a pan. Fry them until the coconut turns light golden. In the same pan, fry the peanuts on medium flame until they turn golden. Take it out in the same bowl and when it cools down, put it in a mixer jar and grind it coarsely. Now add kanda-garlic masala, tamarind pulp, jaggery, turmeric and salt to this stuffing mixture. Mix everything well. Taste and adjust the salt. Your stuffing masala is ready.
Take out the brinjals soaked in water and wipe them dry with a clean cloth. Open the cross cut gently and stuff the masala tightly into each brinjal, pressing well. Do the same with all the brinjals. Keep the remaining masala aside, it will be used in the gravy.
Put oil in a pan. When hot, add mustard seeds, cumin seeds, asafoetida and curry leaves and let them crackle. Add chopped onion and cook on high flame while stirring till it becomes soft. When the onions are golden, add the brinjals to the pan and cook for 3-4 minutes, turning gently, until they are slightly colored on the outside.
Now add the remaining stuffing masala and mix so that everything comes together. Add water and stir slowly. Cook on low flame for 8-10 minutes until the brinjals are completely soft and cooked. When the masala thickens and the brinjal is cooked, add green coriander on top and mix lightly. Delicious Maharashtrian style stuffed brinjal is ready. Serve it with bhakri or rice.
