Potatoes-2 boiled
Onion-1 finely chopped
Green chillies-2-3 finely chopped
Ginger piece – 1 inch grated
Garlic cloves-5-6 finely chopped or ground
Green Coriander – 2 tbsp finely chopped
Red chilli powder-1 tsp
Turmeric-1/2 tsp
Coriander powder-1 tsp
Garam masala-1/2 tsp
Roasted cumin powder-1/2 tsp
salt-as per taste
Cornflour or breadcrumbs-2-3 tbsp
Oil for frying or shallow frying

Method

  1. First of all, peel the raw jackfruit and cut it into small pieces. Add some salt to the cooker and boil for two to three whistles.
  2. When the jackfruit melts well, drain off its excess water and let it cool.
  3. Now mash the boiled jackfruit well. Add boiled and mashed potatoes, green chillies, ginger, garlic, coriander, red chilli powder, turmeric, coriander powder, roasted cumin, garam masala and salt and mix well.
  4. If the mixture seems too soft, add cornflour or breadcrumbs and bind it. Now prepare round or tikki shaped kebabs as per your choice from this mixture. If you want, you can wrap them in light breadcrumbs, which will make the kebabs even more crunchy.
  5. Heat some oil in a non-stick tawa or pan and shallow fry the kebabs on medium flame until they become golden and crisp on both sides. If you want, you can also deep fry them.
  6. Serve hot jackfruit kebabs with green chutney, tamarind chutney or tomato ketchup. Its taste increases manifold with tea during the rainy season.
