Ingredients required to make Mushroom Biryani

  • 1 1/2 cups basmati rice (soaked for 30 minutes)
  • 200 grams of fresh mushrooms
  • 3-4 tablespoons of yogurt
  • 1 tablespoon ginger-garlic paste
  • 2 large onions (thinly sliced)
  • 1 finely chopped tomato
  • 2-3 green chillies
  • ½ tsp turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon biryani masala or garam masala
  • Bay leaves, cloves, cinnamon, cardamom and star anise
  • Coriander and mint leaves
  • ghee or oil
  • Salt to taste

How to make delicious Mushroom Biryani

Marinate the mushrooms

First, wash and chop the mushrooms thoroughly. Add yogurt, ginger-garlic paste, turmeric, red chili powder, coriander powder, biryani masala, and salt to the mixture and let it sit for 10–15 minutes.

Fry the onions till golden

Heat ghee or oil in a heavy-bottomed pan, cooker, or pot. Fry the chopped onions until golden and crisp. Set aside some fried onions for garnish.

Add bay leaves, cloves, cinnamon, cardamom, and star anise to the same pan and lightly fry. Then, add the green chilies and tomatoes and cook until softened.

Add about 2 cups of water and a little ghee and seal the pot. If cooking in a pressure cooker, cook until it whistles 1-2 times. If cooking in a pot, simmer over low heat for 20-25 minutes. After turning off the gas, leave the lid closed for 5-10 minutes.

Serve the prepared mushroom biryani hot with boondi raita, mint raita, yogurt, or a fresh salad . Adding fried onions and cilantro will enhance the flavor.
