Make delicious dhaba style brinjal bharta at home, save the recipe

Needs:

    • Round Brinjal: 1 large (about 400-500 grams)
    • Finely chopped onions: 2 medium sized
    • Finely chopped tomatoes: 2 large
    • Finely chopped green chillies: 2-3
    • Ginger-garlic paste: 1 tbsp
    • Garlic cloves: 4-5 (to add to brinjal)
    • Mustard oil: 3-4 tbsp
    • Spices: Half teaspoon cumin, 1 teaspoon Kashmiri red chili powder, half teaspoon turmeric, 1 teaspoon coriander powder, half teaspoon garam masala.
    • Coriander: finely chopped
    • Salt: as per taste

step 1

First of all, wash and dry the brinjal. Now make 3-4 deep cuts in the brinjal with a knife. Put garlic cloves and a little mustard oil inside these incisions. Apply some oil on the outer part of the brinjal also. Now fry it directly on the gas flame, turning it upside down, until its peel becomes completely black and the pulp inside becomes soft. After roasting, let it cool, then remove the peel and mash it.

Heat mustard oil in a pan. When the oil starts smoking, crackle the cumin seeds. Now add finely chopped onion and fry until it turns golden. After this add ginger-garlic paste and green chilli and stir for 1 minute.

Step 3
Now add chopped tomatoes in the pan. Also add salt, turmeric, coriander powder and Kashmiri red chilli powder. Cook the tomatoes until they get completely cooked and the masala releases oil. To make Dhaba style, it is very important to roast the spices properly.

Step 4
When the masala is ready, add mashed brinjal to it. Lower the flame and fry it well with the spices for 5 to 7 minutes so that the smoky flavor gets absorbed throughout the bharta. Lastly add garam masala and finely chopped coriander and mix.
