1. Sweet Corn Soup
Materials
• Sweet corn – 1 cup
• Chopped onions – 2 tbsp
• Garlic cloves – 1 tsp
• Butter – 1 tbsp
• Cornflour – 1 tbsp (dissolved in little water)
• Water/vegetable stock – 3 cups
• Salt and pepper

Fry garlic and onion in butter. Stir in the sweet corn for 2–3 minutes. Add salt and pepper to measure. Pour in the water/stock and boil for 10 minutes. Add the cornflour and let it boil for another 2 minutes. Serve hot sprinkled with little pepper.
2. Lemon-cilantro soup
Materials
• Chopped coriander leaves – 1 cup
• Lemon juice – 2 tbsp
• Garlic – 3 cloves
• Ginger powder – 1 tsp
• Vegetable stock – 4 cups
• Chilli powder
• Salt

Fry ginger-garlic in little oil. Pour in the stock and simmer for 5-6 minutes. Add salt to it. Add coriander leaves and cook for another 2 minutes. Turn off the gas and add lemon juice. Serve sprinkled with chilies.
3. Creamy Mushroom Soup
Materials
• Mushroom – 200 grams
• Onion – 1
• Garlic – 3 cloves
• Butter – 1 tbsp
• Fresh cream – half a cup
• Vegetable stock – 3 cups
• Pepper and salt

Fry onions and garlic in butter, add mushrooms. Add salt then. When the mushrooms are soft, pour in the stock and cook for 10 minutes. Blend the mixture and pour it back into the pot. Add the cream and let it boil for 2-3 minutes. Serve sprinkled with chilies.
4. Tomato-Basil Soup
Materials
• Ripe tomatoes – 5–6
• Garlic – 4 cloves
• Onion – 1
• Basil leaves (a little coriander if not available)
• Salt and pepper

Fry tomatoes, onion and garlic. Boil with water for 15 minutes, blend. Pour it back into the pot and let it boil. At this time add salt and basil/coriander leaves. Serve with toasted or garlic bread.

5. Vegetable soup
Materials
• Shredded cabbage
• Grate carrots
• Capsicum
• Mushrooms
• Ginger-garlic paste
• Soya sauce – 1 tsp
• Vinegar – 1 tsp
• Pepper and salt
• Cornflower – 1 tsp
• Vegetable stock

Add all the vegetables after frying the ginger-garlic. Pour in the stock and simmer for 8-10 minutes. Mix soy sauce, vinegar, salt and pepper. When slightly thickened with cornflour, serve hot.
