Ingredients to make Almond Kesar Kheer
Almonds – 1 cup
Milk – 1 liter
Saffron threads – 2 pinches
Desi ghee – 1 tablespoon
Cardamom powder – 1/4 tsp
Sugar – as per taste
How to make Almond Kesar Kheer
step 1- To make flavourful Almond Kesar Kheer, first take almonds in a bowl and pour boiling hot water over them. After this, leave the almonds soaked in hot water for about 10 minutes. After this, take out all the almonds with the help of a sieve and wash them by pouring cold water over them. By adopting this process the peel of almonds will be removed easily.
Step 2- Now put all the peeled almonds in a mixer jar and add a little water to it and prepare a fine paste by blending them well. Now put desi ghee in a pan and heat it. After melting ghee, add almond paste to it and fry. Fry the almond paste on low flame while stirring with a spoon until the color of the paste becomes light brown. It will take 7-8 minutes to roast the paste.
Step 3- When the almond paste is roasted well, add milk to it and mix well. After this, increase the gas flame and cover the pan and let the kheer cook. Keep stirring the kheer in between with the help of a spoon or ladle. When the kheer starts boiling, add cardamom powder, sugar as per taste and saffron and mix well by stirring with a ladle.
Step 4- After cooking for some more time, turn off the gas. Flavorful Almond Kesar Kheer is ready. Serve it hot. If you like to eat kheer cold, then keep it in the refrigerator to cool for some time and then serve it.
