Required Materials:

Grated beetroot – 500 grams

Full cream milk – 2.5 cups (about 500 ml)

Desi Ghee – 3 to 4 spoons

Sugar – 1/2 cup (as per taste)

Green cardamom powder – 1/2 tsp

Finely chopped cashews, almonds and pistachios – 2-3 teaspoons

Khoya/Mawa or milk powder – 1/4 cup (optional, to enhance taste)

Step 1: Roast the Beetroot

First of all, peel the fresh beetroot, wash it thoroughly and then grate it. Now add 2 spoons of desi ghee in a heavy bottomed pan and heat it. When the ghee is hot, add grated beetroot to it and fry on medium flame for 5 to 7 minutes. Roasting removes the rawness and smell of beetroot.

Step 2: Cook in Milk

After this, add 2.5 cups of full cream milk in the pan and mix well. Keep the gas flame medium and let it cook while stirring occasionally. The milk will slowly start drying and the beetroot will become completely soft and absorb the milk. This process takes about 15-20 minutes.

Step 3: Mix Sweet and Dry Fruits

When the milk dries completely, add sugar as per taste and khoya (if using). After adding sugar, the halwa will release some water, so cook it until the halwa becomes thick again. Now add cardamom powder and one teaspoon ghee and fry for 2-3 minutes more, so that the halwa gets a good shine.

Step 4: Serve

Heat some ghee in a small pan and fry chopped cashews, almonds and pistachios until they turn light golden and add them to the halwa. Your hot and nutritious beetroot halwa is ready.

Take it out in a bowl, garnish it with roasted nuts and serve it hot or cold. Along with health, this halwa will also double the taste of your mouth.
