How to make pickled arbi curry

    • Step 1: To make pickled arbi curry, first of all, wash the arbi in water so that the soil stuck to it is removed thoroughly. After washing, add water and arbi to the pressure cooker and close the lid. Turn off the gas after two whistles. Do not use more than two whistles otherwise the vegetable may get cooked. Let the cooker whistle on its own. When the whistle comes out, wash it with cold water and remove the peel. Now, cut the arbi into pieces.
    • Step 2: Now, turn on the gas and keep a pan and add mustard oil in it and fry the arbi well in the oil until it becomes crispy. Add arbi little by little in the oil so that the arbi does not stick together and fry well.
    • Third Step: Now add oil in the same pan and then temper it with garlic, green chillies, celery and mustard seeds. When it starts crackling, add turmeric powder, red chilli powder and dry mango powder and mix well.
    • Fourth Step: Now add roasted arbi to this masala and mix well. Now add one tablespoon pickle masala and salt and mix well once again. You can use any pickle spices.
