Prepare Bengal’s famous sweet Mishti Doi by mixing milk with curd.
Mishti Doi: If you want to try something sweet and different at home, then Bengal’s famous sweet Mishti Doi is a perfect option. Mishti Doi is an icon of Bengali culinary heritage. Only three things are used to make it, full-fat milk, sugar and curd. This sweet made from these three tastes very creamy and delicious. The special thing is that you can prepare it very easily at home in halwai style.
Ingredients to make Mishti Doi:
1 liter full cream milk, 2 cups fresh curd, one to one and a half cup sugar, pistachios for garnishing
How to make Mishti Doi:
Step 1: To make Mishti Doi, first make hung curd. Take two cups of fresh curd and place it in a clean cotton cloth. Wrap the curd in a cloth and hang it. Hang it until all the water drains out.
Step 2: Turn on the gas and place one liter milk in a large heavy bottom vessel. Keep the milk in a vessel which is a little thick so that it does not stick to the bottom. Now, boil the milk well. The milk has to be boiled until it thickens to about half a litre.
Step 3: Now take one to one and a half cup of sugar in another pan, according to how sweet you like. Now caramelize the sugar on low flame. The sugar has to be melted until it turns brown. During this time keep the flame slow.
Fourth Step: When the sugar melts, add it little by little to the milk and mix well. During this time, keep stirring the milk continuously.
Fifth Step: When sugar mixes well in milk, then add curd to it. Beat the curd well before adding it to the milk. Slowly add curd and mix well once again.
Sixth Step: Now pour this mixture in an earthen pot and cover it with cotton cloth or foil paper and keep it in the sun for three to four hours. After that keep it at normal temperature for four hours.
Step Seven: After the stipulated time, remove the cloth and you will see that Mishti Doi is ready. Now keep it in the refrigerator to cool for two to three hours. Now, serve chilled.
