Ingredients to make Garlic Corn Palak Sabji
Ingredients for Spinach Puree: Spinach 250 grams, a pinch of salt, ice cold water.
Garlic a big handful, onion 2, tomatoes 2, ginger 1 inch, green chilli 2, oil 3 tbsp, cumin half tsp, big cardamom 1, Kashmiri red chilli powder 2 tsp, turmeric powder half tsp, coriander powder 1 tbsp, sweet corn 250 grams, garam masala a pinch, roasted kasoori fenugreek powder a big pinch, fresh cream 1-2 tbsp, half tsp lemon juice, green Coriander a handful, mint 10-12 leaves
Ingredients for tadka: Ghee 2 tablespoons, garlic chopped, red chilli 2, asafoetida half spoon, green coriander a handful.
How to make Garlic Corn Spinach Sabzi
To make Garlic Corn Spinach Sabzi, wash and clean the spinach thoroughly. Boil water in a vessel and add some salt to it. Add spinach to boiling water and let it sit for 30 seconds. Then take it out directly and put it in ice cold water. Once cooled, squeeze out the excess water and add the spinach along with ginger and green chillies to a blending jar and make a fine puree.
Now, place a pan on the gas and add oil. When the oil is hot, add cumin seeds and black cardamom and let them crackle and then add grated garlic and cook until golden. When it turns golden, add onion and stir. When the onion turns brown, add tomatoes, Kashmiri red chilli powder, turmeric powder, coriander powder and a little hot water. Mix well and let the masala cook on high flame.
When the tomatoes melt well, add sweet corn (boiled) and spinach puree to it. Mix them well and let them cook on high flame for 3-4 minutes. Now add garam masala, roasted kasoori fenugreek powder, fresh cream and lemon juice.
Now, heat a tadka pan on high flame and add ghee. When hot, add garlic and fry until light golden brown. After that add red chilli, asafoetida and mix well. Finally add fresh coriander and pour this tadka over the vegetable. Rich and creamy garlic corn palak is ready.
