Did you know that carbohydrate-rich foods like bread, rice and wheat can increase your weight without increasing your calories? A recent research has shockingly revealed that these foods affect the body’s metabolism in such a way that the body reduces energy burning, which leads to increasing obesity. This research has been published in the journal ‘Molecular Nutrition and Food Research’.
Metabolism is the real reason, not calories
It is generally believed that weight increases only when we consume more calories than required. But this study led by Professor Shigenobu Matsumura of Osaka Metropolitan University has challenged this notion. Experiments conducted on rats found that their weight and body fat increased when they were fed a diet high in carbohydrates, while there was no significant increase in their total calorie intake.
According to scientists, the reason for weight gain was not ‘overeating’ but ‘reduction in energy expenditure’. That is, under the influence of carbohydrates, the body did not use energy as fast as it should have.
Rats liked carbs more
The research team had divided the rats into different feeding groups. It was found that the rats completely abandoned their regular balanced diet (Standard Chow) and preferred carbohydrates like bread, rice and wheat flour. Rats who ate rice or wheat flour gained weight rapidly. In contrast, when wheat flour was removed from the rats’ diets, their weight and metabolic health rapidly improved.
Serious effect on liver and blood
Investigation also revealed that due to excess of carbohydrates, the level of fatty acids in the blood increased and essential amino acids decreased. Additionally, fat began to accumulate in the liver and genes related to lipid transport became more active. Research concludes that weight gain is not only due to wheat, but is the result of increasing preference towards carbohydrates and the metabolic changes resulting from it.
Road to the future: Preparing for research on humans
Professor Matsumura says that in the next phase this research will be applied to the diet of humans. The team will investigate what effect whole grains, refined grains and fiber-rich food have on metabolism. Its objective is to prepare such scientific guidelines for eating habits that can create the right balance between ‘taste’ and ‘health’.
