Material: ½ cup quinoa (boiled), ½ cup chopped capsicum, ½ cup chopped cucumber, ½ cup cherry tomatoes (cut in half), 1 teaspoon olive oil, 1 teaspoon lemon juice, salt and pepper as per taste.
Method: Boil quinoa in water for 12-15 minutes until it becomes soft and fluffy. Wash and cut capsicum, cucumber and tomato. Mix olive oil, lemon juice, salt and pepper in a small bowl and whisk lightly. Add the boiled quinoa to the vegetables and toss well with the dressing. Put the prepared salad in a plate and garnish with some fresh herbs like parsley or coriander. Quinoa is rich in protein and fiber, which keeps hunger at bay for a long time. It is light, nutritious and portion friendly with green vegetables.
Spicy Chana Dal and Green Vegetable Soup

Material: ½ cup boiled chana dal, ½ cup chopped carrots and beans, 1 teaspoon olive oil, ½ teaspoon turmeric, ½ teaspoon red chili powder, salt and black pepper to taste, 1 cup water.
Method: Heat oil in a pan. Add turmeric and fry lightly and then add carrots and beans and fry for 2-3 minutes. Add boiled chana dal and 1 cup water. Mix well.
