Regulations regarding food quality in restaurants, hotels, dhabas and food manufacturing factories will be tightened. Food Safety and Standards Authority of India (FSSAI) has directed all Food Business Operators (FBOs) across the country to use only ‘food-grade’ (safe for food) and rust-proof knives, blades and other cutting tools while cutting, preparing and processing food. Failure to comply with these rules may result in legal action.

FSSAI has noticed that some food traders are using rusty, damaged, discolored or substandard knives and blades. Such equipment may introduce impurities into the food and pose a risk to the health of consumers. The authority has clarified that all food contact equipment should be made of ‘food-grade’, non-toxic and non-corrosive materials.

What devices do these rules apply to?

The new directive applies to all equipment used for cutting, slicing, processing, packaging and preparing food. This includes knives, blades, slicing machines, cutting tools and other food processing tools. FSSAI has clarified that it is also mandatory to keep these equipment clean and in good condition.

Why focus on food security?

It is important to note that rusted or damaged equipment can introduce metal particles, chemical agents and bacteria into the food. This increases the risk of food poisoning and other health problems. Consequently, FSSAI has directed the State Food Safety Commissioners to exercise special vigilance during inspections.

Action for Violation of Rules

FSSAI has clarified that if a hotel, restaurant, food manufacturing plant or any other food business is found violating these rules, they will be dealt with under the Food Safety and Standards Act, 2006.
