Material
Small pieces of cauliflower – 2 cups
Medium Potato – 2
Onion – 2
Butter – 2 tbsp
Flour – 2 tbsp
Milk – 2½ cups
Grated cheese – 3 tbsp
Fresh cream – ½ cup
Salt – as per taste
Black pepper – as per taste
Method of preparation
step 1
First of all, cut the cauliflower into small pieces. Take some hot water in a vessel, add salt in it and boil the cauliflower pieces until they become soft. After boiling, take them out of the water and keep them aside.
Step 2
Now peel the potatoes and onions and cut them into thick pieces. Add about 4 cups of water in a pressure cooker and cook till one whistle.

Step 3
When potatoes and onions are cooked, let the cooker cool. Then grind them well with the help of a hand mixer or blender and filter the mixture through a sieve so that the texture of the soup becomes smooth.

Step 4
Now heat butter in a nonstick saucepan. Add flour to it and fry until it becomes light golden. Take care that the flour does not burn.

Step 5
Now slowly add milk to it and keep stirring continuously so that lumps do not form. Cook it till it comes to a boil and prepare a light thick white sauce.

Step 6
Now add this white sauce to the prepared potato-onion mixture. Add grated cheese and fresh cream along with it and cook for about 3 minutes.

Step 7
Now add salt and black pepper as per taste and mix well.

Step 8
Just before serving, add the boiled cauliflower pieces to the soup and bring to a gentle simmer.

Step 9
Pour the hot soup into a serving bowl and sprinkle some cheese or black pepper on top and serve.

Tips and Tricks:
Do not over boil cauliflower
Boil the cauliflower just until it becomes soft. Overboiling can spoil its taste and texture.
Keep stirring the white sauce continuously
While adding milk to butter and flour, keep stirring continuously so that lumps do not form in it and the sauce becomes smooth.
use fresh cheese
Adding grated fresh cheese makes the soup more creamy and flavourful.
add black pepper at the end
Add black pepper to the soup just before serving, this improves its taste and aroma.
Enhance taste with garnish
While serving, add some cheese, fresh cream or green coriander on top. This will make the soup look attractive and also enhance the taste.
