  • Raw mango (peeled and chopped) – 1 cup
  • Jaggery – 1/2 cup
  • Salt – as per taste
  • Red chilli powder – 1/2 tsp
  • Roasted cumin powder – 1 tsp
  • Fennel – 1/2 tsp
  • Water – 1/2 cup
  • Oil – 1 tsp
  • Mustard – 1/2 tsp
  • Curry leaves – 5-6

How to make raw mango chutney

Chutney prepared from raw mango tastes very tasty. To make this, first peel the raw mango and cut it into small pieces. Now add some water in a pan and cook the mango pieces for 4-5 minutes until they become soft. This will soften the sourness of the mango and the texture of the chutney will also become better.

When the mango becomes soft, add jaggery to it and cook on low flame. The jaggery will melt and mix well with the mango. Now add salt, red chilli powder, roasted cumin and fennel. These spices make the taste of chutney sweet-sour and slightly spicy.

Now heat oil in a small pan and add mustard seeds in it. When the mustard seeds start crackling, add curry leaves to it. Add this tempering to the prepared chutney and mix well. This gives a different aroma and taste to the chutney.

If you like smooth chutney, you can cool it a little and grind it in a mixer. On the other hand, if you like chunky texture, then leave it as is. Chutney tastes very tasty in both the ways.
