Ingredients for making apple jam
apples 2 kg
water one and a half kilos
citric acid 5 grams
sugar 2 kg
Calcium Chloride 2 grams
Potassium Metabi Sulphite a little
Marmalade making process
- The apples to be made into marmalade should be washed thoroughly and should be spotless. First clean the apples thoroughly in water and then peel them finely.
- Apples contain iron, which can change their color after peeling. Therefore, immediately after peeling, dip the apples in 0.5% potassium metabisulfite solution.
- After this, take out the apples from this solution, wash them in clean water and then soak them overnight in a mixture of 1.50% calcium chloride and 0.2% potassium metabisulfite. The next day, take out the apples from this solution and wash them again in water.
- Boil water in a vessel. When the water starts boiling, remove the pot from the heat and put the apples in it for about 7 to 10 minutes.
- Take out the apples from the boiling water and put them in cold water. After some time, prick them with a fork. Now mix sugar and water and put it on fire to make syrup and add citric acid to it. When the syrup is ready, filter it with a cloth and put the apples in it and heat it again.
- Let the syrup cook on low flame. When it thickens, remove it from the flame and let it cool and leave it overnight. Reheat the next day and leave overnight.
