Easy way to make Spicy Misal Pav

At this time, Ganesh Utsav is in full swing across the country, especially in Maharashtra it is celebrated with great enthusiasm. On this occasion, Maharashtra's famous street food, Misal Pav, can add a unique flavor to your festive meal. Served with spicy gravy, crunchy farsan, fresh onions, lemon and garam pav, this dish is not only delicious but also filling.

MasterChef India 2023 finalist, Aruna Vijay has shared the recipe of Misal Pav on her Instagram. He said that in a good misal pav, spicy gravy, crisp farsan, fresh onion, sourness of lemon and properly baked pav together create a wonderful taste.

Ingredients to make Misal Pav

For masala paste:
Oil – 1 tbsp
Onions – 2 medium, chopped
Tomatoes – 2 medium, chopped
Dry coconut – half cup, grated
Ginger – 1½ tbsp, chopped
Garlic – 10 large cloves
Green chilli – 2, cut from the middle
Coriander stalks – a handful
Sesame seeds – 1 tablespoon
Poppy seeds – 1 tablespoon
Water – as required for grinding
For cut or curry:
Oil – 2 tbsp
Cumin – 1 tsp
Mustard – 1 tsp
Red chilli powder – 2 tbsp
Turmeric powder – half teaspoon
Coriander powder – half tablespoon
Goda masala – 1 tbsp
Garam masala – 1 tsp
Salt – 3 teaspoons
Jaggery – a little
Water – 5 to 6 cups
Sprouted Matki – 1½ cups
To serve:
Farsan – rich topping
Onion – finely chopped

How to make Misal Pav

Heat oil in a pan. Add onion, tomato and masala paste ingredients and fry until it turns light brown. Then let it cool. When the mixture cools down, add some water and grind it to make a smooth paste. Now heat oil in a pan and add cumin and mustard seeds. When it starts crackling, add the prepared masala paste and cook for a few minutes. After this, add sprouted matki in it and mix the rest of the spices. Then add jaggery and water and let it cook on low flame. Cook until the matki is cooked well and the gravy becomes as thick as you like. Serve the prepared misal hot, add farsan and chopped onion on top, along with lemon slices and pav.

Things to keep in mind while making misal pav

Sproute the matki a day before, this will improve the taste and texture of the misal. It is important to roast the masala paste ingredients well, especially roasting the desiccated coconut to give the misal a deep and aromatic flavour. Adjust the consistency and spiciness of the gravy as per your preference.
