How to make Mushroom Masala
If you are tired of the same mushroom curry every day, then try making it in a new way this time. Dhaba Style Mushroom Masala is not only spicy and aromatic, but also has an extremely rich taste. No special materials are required to make it.
According to renowned chef Ranveer Brar, while making mushroom masala, the method adopted is to lightly smoke it with curd and spices. The aroma of smoke gives this simple vegetable a dhaba-like taste.
Preparing Mushroom Masala
First clean the mushrooms thoroughly. To remove dirt, add some wheat flour to it, mix well and then wash with water.
Now add cleaned mushrooms in a vessel. Add ginger-garlic paste, salt, oil, finely chopped green chillies and coriander stalks in it. After this add whipped curd, red chilli, turmeric, coriander powder and some cumin powder.
Mix all the ingredients well with the mushrooms and leave for some time so that the flavor of the spices gets absorbed into the mushrooms.

Now heat some oil in a pan or handy. Add dry Kashmiri red chilli and cumin seeds and temper it. After this add coarsely chopped onions and cook them until they become slightly soft.
Now put the marinated mushrooms in the pan and mix well with the spices. After this add chopped tomatoes and cover the vessel and let it cook for some time.
When the mushrooms become soft and the spices are cooked well, add garam masala and some butter to it. Butter will enhance the taste of the vegetable.

The specialty of this recipe is its smokey flavour. For this, keep hot coal in a small steel bowl and pour some ghee on it.
Now place this bowl between the prepared mushroom masala and cover the pan. By keeping it covered for a few minutes, the coal smoke will absorb into the vegetable.
Then carefully take out the bowl and mix the mushroom masala once. This will give the vegetable a light smoky aroma and a dhaba-like taste.

Once the mushroom masala is ready, take it out in a serving bowl. Garnish by adding finely chopped coriander and cashew nuts on top.
Hot mushroom masala can be served with roti, naan or paratha. The combination of curd, spices, butter and smoky flavor gives it a different taste from the everyday mushroom curry.
