If you feel like eating something hot and crispy with evening tea, then Palak Patta Pakora can be a delicious option. These pakodas, prepared by coating fresh spinach leaves in a mixture of gram flour and spices, are made in a short time. The special thing is that for this only the ingredients easily available at home are sufficient.
Start preparation with spinach leaves
First of all, wash the spinach leaves thoroughly with clean water. After removing the soil and dirt from the leaves, dry them thoroughly with a cloth or kitchen towel. Due to water remaining on the spinach, the batter does not stick properly and may also splatter when put in hot oil. Large leaves can be cut into two parts as per requirement.
Prepare spicy batter
Take gram flour and some rice flour in a vessel. Add celery, turmeric, red chilli powder, coriander powder and salt as per taste and mix. Now prepare a thick batter by adding water slowly. The batter should neither be too thin nor too thick. Keep it for a few minutes, so that the ingredients mix well.
Fry spinach leaf pakoras like this
Heat oil in a pan and keep the flame medium. Now wrap each spinach leaf thoroughly in the prepared gram flour solution and put it in hot oil. Fry the leaves carefully and keep turning them occasionally. When the pakoras become golden and crisp from both sides, remove them from the oil and keep them on tissue paper.
Hot Palak Patta Pakodas can be served with green coriander-mint chutney, tamarind chutney or tomato sauce. Adding some chaat masala on top enhances the taste even more.
Keep these things in mind for crunchy pakodas
It is most important to dry the spinach leaves thoroughly after washing them. Adding rice flour to the batter gives extra crunch to the pakoras. Heating the oil too fast can cause the pakodas to brown quickly on the outside, while the batter inside may not cook completely. Therefore, it is better to fry the pakodas slowly on medium flame.
With this easy recipe, you can prepare delicious and crunchy Palak Patta Pakodas to serve with tea at home in less time.
