On the occasion of Diwali, news of adulteration in sweets available in the market often increases people's concern. In such a situation, people are now looking for pure and safe options at home. If you want the taste of Kaju Katli, low cost and rich nutrition this festive season, then protein-rich Peanut Katli is a great option. It is very easy to make and it is also beneficial for health.
Ingredients required for Peanut Katli
Peanuts: 2 to 3 cups (raw)
Milk powder: 2 tbsp (for creamy texture)
Natural sugar-free sweetener: 1 cup
Water: 1/2 cup
Desi ghee or oil: 1 tsp
Cardamom Powder: 1/4 tsp
Method of preparation
Roast peanuts and remove the skin: First of all, roast the peanuts in a pan on low flame. When the peel starts coming off easily, turn off the gas and take the peanuts out in a plate and let them cool. When it cools down, mash it with hands and remove the peels.
Make Powder: Put the cleaned peanuts in the mixer. Run it on pulse mode so that oil does not come out and dry powder is formed. Then filter this powder through a sieve and add 2 spoons of milk powder and cardamom powder to it.
Make syrup: Add 1 cup sugar-free sweetener and 1/2 cup water to a pan. Boil it on low flame for 5 minutes. When the syrup forms a string, it is ready.
Cook the mixture: Now slowly add peanut powder to the syrup and keep stirring continuously. Add 1 teaspoon desi ghee in it. When the mixture starts leaving the sides of the pan, turn off the gas.
Roll and shape: Spread butter paper on a plate and apply some ghee on it. Pour the prepared mixture on it. When it cools down slightly, knead it smooth with your hands. Then place another butter paper on top and roll it with a rolling pin. Finally, cut it into diamond shape with a knife. Your tasty, healthy and adulteration-free peanut katli is ready.
