First step: Take a medium-sized eggplant. Cut it into large slices from the stalk downwards. Make three slices per eggplant. Now, make a few cuts in the eggplant with a knife or fork so that the spices penetrate the eggplant while frying. Soak the cut eggplant in water to prevent it from turning black.

Step Two: In a mixer, first add 1 teaspoon of Kashmiri red chili powder, 1 teaspoon of fennel seeds, 1/2 teaspoon of turmeric powder, hot red chili powder, coriander powder, and mango powder. Add salt, 7-8 garlic cloves, ginger, lemon juice, and a little water and grind it into a fine paste.

Step Three: Now, thoroughly coat both sides of the eggplant with the prepared spices. Pour mustard oil into a non-stick pan or wok and place the eggplant in it. Fry the eggplant thoroughly on both sides. When the eggplant becomes slightly crispy, remove it.
