Vegetable pasta recipe
boil pasta
Boil enough water in a large vessel. Add some salt and a few drops of oil in it. Now add the pasta and cook as per the time given on the packet until al dente (slightly soft). After boiling, filter the pasta, wash it with cold water and keep it aside.
fry vegetables
Heat oil and butter in a pan. First of all, add garlic and fry until it becomes light golden. After this add onion and cook till it becomes transparent. Now add carrots, capsicum, peas and sweet corn and cook on high flame for 3-4 minutes until slightly crunchy.
Mix sauces and spices
Now add tomato sauce, chili sauce, salt, black pepper and mixed herbs in the pan. Mix everything well and cook for 1-2 minutes so that the flavor of the spices gets absorbed well into the vegetables.
mix pasta
Add boiled pasta to the pan and mix well with gentle hands. Take care that the pasta does not break. Cook on low flame for 2 minutes so that the sauce thoroughly coats each pasta.
serve with cheese
Finally add grated cheese on top and keep covered for 1 minute so that the cheese melts slightly. Garnish the prepared vegetable pasta with green coriander or parsley and serve it hot.
