Bhifonta is incomplete without food. Sisters have no end of thinking about what to feed their brother. Fish, meat will be. But before that you can cook orange cauliflower in Thakurbari style. Brother will be forced to eat and lick his hands, no doubt about that.
Ingredients:
Cauliflower: 1 (can take more if required)
Oranges: 2
Ginger Bata: 1 teaspoon
Cumin batter: 1 teaspoon
Coriander Powder: 1 teaspoon
Turmeric Powder: half teaspoon
Chilli Powder: to taste
Bay leaves: 1
Whole Cumin: half teaspoon
Green Chilli: 2
Salt: to taste
Ghee: 1 teaspoon
Mustard Oil: as needed
Procedure:
Cut the cauliflower in medium size and wash it well. Now put the chopped cauliflower in hot water with little salt and turmeric. Keep it for a while and drain the water. Meanwhile, juice the oranges in a bowl. Be careful not to let the seeds fall into the juice.

Now put mustard oil in a pan. Fry the cauliflower in that oil to a light golden color. Remove from the pan to a plate. Now put some more oil in that pan. When it gets hot, add whole cumin seeds and bay leaves to that oil. Then add ginger and cumin seeds one by one. Add coriander, turmeric and chili powder. Sprinkle little water and strain.
When the oil comes out from the spices, add the fried cauliflower to the pan. Add little water with salt, sugar and green chillies one by one as per taste. When the cauliflower is cooked, pour in the orange juice. But make sure that there is a low flame at that time. Otherwise the orange juice may turn bitter. Now turn off the gas. Add ghee to it. Serve the mashed delicious orange cauliflower. You can give rice, roti, luchi, parota all with it.
