Amritsari Chole Recipe: If you like spicy, spicy and rich Punjabi taste in your food, then Amritsari Chole can be the perfect option for today’s dinner. The aroma of spices, thick gravy and taste of chickpea – the specialty of this dish is such that it makes the mouth water just by looking at it. If you get hot bhature, puri, paratha or kulcha along with it, then the pleasure of eating gets doubled. The popularity of Punjabi food is no longer limited to Punjab only. From Chole-Bhatura to Rajma, Kadhi and many other Punjabi dishes, today they are very much liked in homes across the country. One of these is Amritsari Chole, which is known for its special spices and desi style.
If you want to try something different from the everyday vegetables and pulses and a little spicy in taste, then this recipe can make your dinner special. Chickpea is mainly used to make Amritsari Chole. By cooking them with spices, a taste is created, which is quite different from ordinary chickpeas.
Ingredients to make Amritsari Chole
- Chickpea – 1 cup
- Onion finely chopped – 2
- Tomatoes finely chopped – 2
- Garlic chopped – 7-8 cloves
- Ginger finely chopped – 1 inch piece
- Cinnamon – 1 inch piece
- Bay leaves – 2
- Large cardamom – 2
- Green chillies cut lengthwise – 2
- Cloves – 2
- Tea bag – 1
- Kasuri Methi – 1/2 tsp
- Red chilli powder – 3/4 tsp
- Mango powder – 1/2 tsp
- Coriander powder – 1 tsp
- Turmeric – 1/4 tsp
- Cumin – 1 tsp
- Dry red chilli – 1
- Oil – 2 tbsp
- Salt – as per taste
Amritsari Chole Recipe
step 1- To make Amritsari Chole, first take gram and soak it in water for at least 6 hours. After this, drain the water from gram and put it in the cooker. Now pour two and a half cups of water in the cooker, add large cardamom, cloves, bay leaves, sweet soda, tea bag and salt as per taste and cover the cooker with lid and keep it on low flame. Cook the gram till the cooker gives 4 whistles. After this turn off the gas.
Step 2- Now take a pan and add 2 tablespoons oil in it and keep it to heat on medium flame. When the oil becomes hot, add cumin seeds and crackle. When cumin starts crackling, add chopped ginger and garlic to it. After stirring with a ladle for a few seconds, add finely chopped onions and fry for about 2 minutes. When the onion becomes soft and looks light brown, add all the other spices and salt to it.
Step 3- Now crush Kasuri Methi with hands and add it to this masala and fry for about a minute. Then add finely chopped tomatoes and let the gravy cook. Cover the pan and cook for 2-3 minutes so that the spices, onions and tomatoes can cook properly. Now take out the chickpeas from the cooker and put them in the pan and cook by mixing it well with a ladle.
Step 4- Now add long chopped green chillies into it. Then add dry mango powder and cook for 2 minutes and turn off the gas. Your delicious Amritsari Chole is ready. Serve it with paratha or rice in lunch or dinner.
