Rice is an important part of Indian food, but often it sticks together or turns into pudding while cooking. This problem happens with most people. 1. Washing and soaking correctly
The biggest reason for sticking of rice is the excess starch present in it. Before cooking the rice, rinse it in cold water until the white starch stops coming out and the water runs clear. After washing, soak the rice in clean water for at least 20 to 30 minutes. Due to this, the rice grains absorb water and become slightly longer and do not break while cooking.
2. Correct proportion of water
Decide the quantity of water depending on the method of cooking rice. 2 cups water for 1 cup rice is a good measurement. If you are boiling rice by adding more water in the pot, then there is no restriction on water. After the rice is cooked, filter and separate the starch.
3. A little ghee and lemon will bring magic
When the water boils, add half a teaspoon of desi ghee or refined oil in it. The oil forms a layer on the rice grains, preventing them from sticking together. After this, add 4-5 drops of lemon juice in the cooking water. Lemon acid helps in breaking down the starch, which makes the rice bloom and its color also looks completely white.
4. Correct balance of flame and cooking with a cover
Let the water and rice boil on high flame first. When the water reduces a little and reaches the level of the rice, then reduce the flame to very low. Cover the vessel tightly with a lid and let it cook on low flame for 8-10 minutes. Do not disturb the rice by repeatedly lifting the lid or stirring it with a ladle, this may break the grains.
5. Allow resting time after cooking
Do not serve the rice immediately after switching off the gas nor stir the ladle immediately. After turning off the gas, leave the vessel covered for 10 minutes. The rice gets completely set inside in the steam. After 10 minutes, remove the lid and gently stir the rice up and down with the help of a fork.
