15th August i.e. Independence Day is a special day for every Indian to instill a sense of pride and patriotism. Material
- Milk powder – 2 cups
- Condensed milk – 1 cup
- Ghee – 2 tbsp
- Milk – 4 to 5 tbsp
- Cardamom powder – half teaspoon
- Orange color – pinch
- Green color – pinch
- Finely chopped cashews-almonds – 2 tbsp
- Pistachio Slices – For Garnish
- For the middle layer of the tricolor, mix coconut kiss or plain white ice cream

- Heat ghee in a pan and add milk powder and condensed milk. Add some milk to it and mix well. Stir constantly over low heat so that the mixture does not stick to the bottom of the pan.
- Cook the mixture on low flame until it becomes a barfi-like consistency. Switch off the flame when the mixture starts to leave the sides of the pan. Add cardamom powder and mix well.
- Divide the prepared mixture into three equal parts. Mix orange color in one part and green color in the other part.
- Keep the third part white. Keep the quantity low while mixing the colors, so the color of Barfi will look soft and attractive.
- Lightly grease a plate or square tray with ghee. First spread the orange mixture in it. Spread the layers evenly with the back of a spoon or a bowl greased with ghee.
- Spread the white mixture separately on the orange layer. Do not press it too hard. After the entire layer is spread evenly, you can spread thinly sliced cashews-almonds or pistachios on it.
- Finally, spread the green mixture over the white layer. Flatten the top by lightly pressing it with a spoon. Allow the prepared barfi to cool to room temperature for some time and then keep it in the fridge to set.
- After the barfi is set properly, take it out of the tray and cut into square or rectangular pieces. from above
- Garnish with pistachio slices. This way attractive tricolor barfi will be ready to serve.
- Always keep the gas flame low while cooking the barfi mixture. Overcooking the mixture can make the barfi hard.
- Barfi looks more beautiful if the layers of all the three colors are of equal thickness.
- When using color it is best to use food-grade color in very small quantities.
- Barfi will retain its shape if cut into pieces only after it has completely cooled and set.
