Lifestyle Desk: The festival of Karva Chauth is very special for married women. On this day, women observe Nirjala fast wishing for the long life and happy married life of their husbands. The fast begins with eating sargi before sunrise. It is preferred to include such things in Sargi, which are tasty and help in keeping the stomach full for a long time. In such a situation, homemade crispy buttermilk made from desi ghee and jaggery can be a good option. Instead of buying expensive buttermilk from the market, you can easily prepare it at home. Let us know the easy way to make it.
Material
Wheat flour – 2 cups
Desi ghee – four to five tablespoons
Jaggery-half cup
Fennel – half teaspoon
Cardamom powder – a pinch
Some lukewarm water to dissolve jaggery
Ghee or oil for frying buttermilk
Method
1-First of all break the jaggery into small pieces. Now add it to some lukewarm water and mix it well. When the jaggery dissolves completely, filter the solution so that the impurities present in it are removed.
2- Take flour in a big vessel and add desi ghee to it and mix well. Now add fennel and cardamom powder.
3- After this, add jaggery solution little by little and knead a stiff dough. Keep in mind that the flour should not be too soft, as this may affect the crispy texture of the buttermilk.
4-Make small balls of the kneaded dough. Roll them out lightly and make some holes with the help of a fork. This will reduce the chances of the buttermilk swelling while frying and it will become crisp.
5-Heat ghee or oil in a pan. Keep the flame low to medium and fry the buttermilk slowly until it turns golden. Jaggery may cause the buttermilk to darken quickly, so take care while frying that it does not burn. Take out the prepared buttermilk and let it cool.
These tips will make buttermilk more crispy
To make the buttermilk crisp, it is important to maintain the correct amount of ghee in the flour. Knead the dough hard and do not fry the buttermilk on high flame. After frying, let them cool completely and then keep them in an airtight container, so that their crispness remains.
