Material
- Semolina: 1 cup
- Curd: ½ cup
- Poha: ¼ cup
- Water: as required
- Green chilli: 1-2
- Ginger: 1 tsp
- Eno or baking soda: ½ tsp
- Salt: as per taste
- Oil/Ghee: For frying dosa
method of making
step 1: First of all, wash the poha with water and soak it for 5 minutes. Now add semolina, soaked poha, curd, salt and a little water in a mixer jar and make a smooth paste.
Step 2: Take out the prepared batter in a bowl. Its consistency should not be very thin. Keep it covered for 10-15 minutes so that the semolina swells properly.
Step 3: If you want, you can also add chopped green chillies, ginger, curry leaves or finely chopped onion to the batter. This further enhances the taste.
Step 4: Just before cooking, add Eno or baking soda to the batter and add 1 teaspoon water on top and mix gently in one direction. The batter will become very fluffy.
Step 5: Apply a little oil or ghee in a small deep appam pan or small non-stick pan. Now put one to one and a half tablespoon of batter in the center of the pan. Keep in mind, it does not have to be spread like a normal dosa.
Step 6: Cover the pan and let it cook for 2-3 minutes on low flame. When the top surface becomes dry and the dosa swells, apply some oil and turn it. Cook from the other side also until it becomes light golden.
