Material
for koftas
- 500 grams jackfruit (boiled and mashed)
- 2 medium boiled potatoes
- 4 tbsp gram flour
- 1 tsp ginger-garlic paste
- half teaspoon turmeric
- Half tsp red chilli powder
- half teaspoon garam masala
- Salt as per taste and oil for frying.
for gravy
- 2 large onions (finely chopped or paste)
- 2 tomato puree
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- half teaspoon turmeric powder
- 1 tsp Kashmiri red chilli powder
- half teaspoon cumin
- 2 green cardamoms
- 1 bay leaf
- 1 tsp kasoori methi
- half teaspoon garam masala
- Half cup fresh curd (whipped)
- 2 teaspoons green coriander (finely chopped)
- 3 tbsp mustard oil or ghee.
How to make Kofta
step 1: First of all, boil jackfruit and potatoes in the cooker. When it boils, let it cool. It can also be put in cold water. Now mash the boiled jackfruit and boiled potatoes well in a big vessel. Now add gram flour, ginger-garlic paste, turmeric, red chilli, garam masala and salt and mix. Make small round koftas from this mixture.
Step 2: Now take a pan and heat oil in it. Then fry the koftas on low to medium flame until they turn golden and take them out.
Step 3: Now take another pan and heat 3 spoons of oil or ghee in it. Then add tempering of cumin, bay leaves and green cardamom to it. After this add onion and fry till it turns golden.
Step 4: Once the onion is fried, add ginger-garlic paste and stir for 1 minute. Now add tomato puree, turmeric, red chilli, coriander powder and salt and fry until the oil starts separating from the spices.
Step 5: After this, reduce the flame and add whipped curd and keep stirring continuously so that the curd does not curdle. When the masala is cooked, add one and a half to two cups of hot water to it and let the gravy boil.
Step 6: When the gravy gets cooked and starts thickening, add fried jackfruit koftas, kasoori methi and garam masala. Cover it and let it cook on low flame for 3-4 minutes so that the koftas absorb the flavor of all the spices. Then serve it with hot paratha.
