As soon as the name of Banaras is mentioned, the spicy and delicious food comes to mind, and on hearing the name of Banarasi Kachori, the mouth starts watering. Crispy on the outside and spicy on the inside, this hot kachori with puran is a different pleasure to eat for breakfast or evening tea. If you also like the taste of Banaras Kachori, then it is very easy to make it at home. However, it is important to keep some special things in mind while making the dough and frying the Kachori.

To make Banarasi Crispy Kachori, you will need flour, half lentil, oil or ghee, sweet, asafoetida, cumin, variali, coriander, red chilli, mango powder (caraway powder) and some hot spices. Oil/ghee (for making dough) and water, as well as enough oil for frying. Kasuri fenugreek can also be added to the spices for more spicy taste.
method of preparation
First of all, soak add or magni dal in water for a few hours. After that, drain the water and grind the pulses into fine powder. Now heat some oil in the pan and add cumin, curry and asafoetida. Then add ground pulses and mix well. Add sweet, red chilli, coriander seeds, mango powder and hot spices and mix. Cook the puran till the water evaporates completely and then let it cool. Take flour in a big vessel, add some sweet and ghee to it and mix well with both hands. There should be enough flour in the flour to form a shape like laddu when pressed in the hand. Now add water little by little and make a soft dough (the dough should not be too hard or too soft). Keep the dough covered for 15 to 20 minutes.
Once the dough is set, make small balls out of it. Spread one dough a little with your hands and fill the prepared dal puran in the middle. Now pull the edges upwards and pack the masala well. Press it gently and give it the shape of Kachori. Do not keep the Kachori too thin, a little thick Kachori becomes crispy from outside and nice from inside. Heat enough oil in the pan. Keep in mind that the oil should not be too hot, otherwise the Kachori will quickly turn red on the outside but will remain raw from inside. Place the kachoris in oil and fry on low flame. Keep turning it in between so that it becomes golden and crispy from both the sides. After it becomes golden and crispy, serve it hot with batatana vegetable, green chutney and pickle.
