Tricolor Idli

Materials

• Idli batter – 3 cups
• Carrot – 1
• Spinach – 1 cup

Boil carrot slices to make orange puree. When cool, make a fine puree in a mixer. Steam the spinach for 1-2 minutes to make green puree. When it cools down, make a puree.

Divide the idli batter into three. Mix carrot puree in one part and spinach puree in another part. Keep the third part white. Grease the mold with little oil. Add idli batter of different colors to it. Steam for 10-12 minutes. Serve Teranga Idli with coconut chutney.

Tricolor sandwich

Materials

• White bread
• Carrot – 1
• Paneer – half a cup
• Coriander leaves – half a cup
• Mint leaves – 3 tbsp
• Cheese Slices – 2
• Lemon juice – 1 tsp

Saute the grated carrots in a little oil in a pan for 2-3 minutes. Add grated cheese and little salt to it. When cool, set aside. Make green chutney with coriander leaves, mint, lemon juice, salt and water.

Spread the carrot-cheese filling on one slice of bread. Place a slice of cheese on it. Spread green chutney on another piece of bread and place it on top. Cut off the hard part around. Bake the sandwich on low heat. Cut into fun shapes and serve.

Teranga Polao

Materials

• Basmati rice – one and a half cups
• Carrot – 1
• Tomato – 1
• Spinach – 1 cup
• Coriander leaves – half a cup
• Cumin – half teaspoon

Wash the rice and soak it for 15 minutes. Cook and make neat rice, divide into three parts. Blend the carrot-tomato puree to make the orange layer. Boil cumin seeds in little ghee and stir the paste for 2-3 minutes. Mix one part of rice and a little salt and stir again.

For the white layer you can simply stir white rice with ghee, salt and cashews. For the green layer, make a paste by blending spinach and coriander leaves. Stir the paste in little ghee, mix with third part of rice.

Put the oranges first, then the whites and finally the greens in the bowl. Set it under the pressure of a spoon. Teranga Polao is ready by inverting the bowl on the plate.

No-Cook Tricolor Fruit Skewers

Materials

• Orange peel/papaya – 1 cup
• Banana – 1–2
• Green Grapes/Kiwi – 1 cup
• Lemon juice – 1 tsp

Arrange three colored fruits in a row on a toothpick or kabar stick. You can spread a little chaat masala or lemon juice. Your little three-color food plate, will catch the eye!
