Material

to make papdi

  • Flour – 1 cup
  • Semolina – 2 teaspoons (for extra crunch)
  • Celery – ½ tsp
  • Oil – 2 spoons (for frying) + for frying
  • salt to taste

To assemble the chaat

  • Boiled potatoes – 2 (cut into small pieces)
  • Boiled black gram or matra – ½ cup
  • Fresh thick curd – 1 cup (whipped with 1 teaspoon sugar)
  • Green chutney (coriander-mint) – ½ cup
  • Sweet and sour tamarind chutney – ½ cup
  • Roasted cumin powder – 1 teaspoon
  • Red chilli powder – ½ teaspoon
  • Chaat masala – 1 teaspoon
  • Black salt – as per taste
  • Finely chopped sev/bhujiya, green coriander and pomegranate seeds – for decoration

method of making

Prepare Crispy Papdi
Mix flour, semolina, celery, salt and 2 teaspoons oil in a vessel and mix well. When the flour starts clumping in your fist, then understand that Moyan is right. Now add lukewarm water little by little and knead a slightly stiff dough. Keep it covered for 15 minutes. After this, make small balls of dough and roll them into thin puris. Poke holes in the puris with a fork so that they do not swell while frying. Now heat oil on low flame and fry the papdis until they become light golden and crisp.

Assemble Chaat
Now spread 6 to 8 prepared papdis in a big plate. Add chopped boiled potatoes and boiled gram over it.
