Material
- Bread slices: 4 (white or brown)
- Boiled potatoes: 2 (mashed)
- Paneer: 1/2 cup (grated)
- Boiled corn (sweet corn): 1/2 cup
- Finely chopped onion: 1 small
- Green chilli: 1 (finely chopped)
- Green coriander leaves: finely chopped
- Spices: 1/2 teaspoon chaat masala, 1/2 teaspoon chili flakes, 1/2 teaspoon oregano, salt and pepper powder to taste
- Butter: for toasting sandwiches
Method of preparation
Prepare the stuffing: Take a pan and add half a teaspoon of butter. Once the butter melts, add finely chopped onions and green chilies. Once they are sautéed, add mashed potatoes, grated cheese, and boiled corn. Mix well. Now add chaat masala, chili flakes, oregano, black pepper, and salt to taste. If you want to make the sandwich more creamy, add 2 teaspoons of mayonnaise or cheese spread. Mix everything well.
Assemble the sandwich: Take two slices of bread. Spread green chutney or butter on one slice, and tomato sauce on the other. Spread the prepared potato-cheese-corn filling evenly on one slice of bread. Place the second slice of bread on top and press down lightly.
Toast/grill: Heat a pan or sandwich maker. Apply a little butter to the outside of the bread. Place the sandwich on the pan and toast over low to medium heat until golden and crispy on both sides. Enjoy once both sides are toasted.
