Here is how to prepare Aloo Matar Pulao:

To make Aloo Matar Pulao, first, heat some water in a pot. Once the water is thoroughly heated, add the whole spices (Garam Masala) and the black cardamom (Badi Elaichi). Now, add the fennel seeds, cumin seeds, finely chopped ginger, and peeled garlic. Next, add the bay leaf, black peppercorns, and onions, and let everything boil together thoroughly.

Once everything has boiled sufficiently, strain the mixture using a colander and set the liquid aside. Now, heat a separate pan or pot and add some ghee (clarified butter). Once the ghee is hot, add the finely chopped onions and sauté them well until golden brown.
